Day 1 (1): Arrive in Hanoi (D)
Upon arrival, a guide is
waiting to transfer guests to the hotel. Hanoi

Meet at Le Beaulieu Restaurant at 7.00pm for casual easy dinner (beverages/drinks at own expense) - get
to know your fellow travellers. This restaurant is located in the Sofitel
Metropole hotel. The friendly atmosphere
of this contemporary haute brasserie where patrons come to savour the best and
most authentic French cuisine in Vietnam. Le Beaulieu is particularly
well-known for Chef Denis's family recipes..
Day 2 (Hanoi (B, L, D)

will introduce us to her friends in Hanoi.

Meet the
renowned French chef, Didier Corlou, at his restaurant La Verticale
which gained fame with French-Vietnamese fusion dishes created by the chef
himself. After a short introduction, enjoy a guided market visit and then
transfer to the chef’s villa, also known as “Carambola house”
|

In the evening, we could do a night market and taste some great
street food which Kim thoroughly recommends.
Tonight we indulge in bun
cha on the streets. Bring along a healthy appetite, plus your camera and
notebook.

Day 3 (: Hanoi (B D)
Free time to hit the shops and to discover the Old Quarters on a
Cyclo? Be sure to taste a good few Ca phe da (Vietnamese iced coffee) as well
as a patisserie or two!
Meet for lunch at KOTO – Know One Teach One – this establishment
provides positive change to the lives of street/disadvantaged youth.
We’ll have dinner at the famous Cha Ca la Vong (as authentic as it comes).

Day 4 : Fly to Danang – Hoi An (B D)
Free for tai chi in the park, a strole to the Lake, or wander
through the lanes of Hanoi, until transfer to the airport for Danang, then
transfer to Hoian and check in the hotel.
Life
Heritage Resort Hoi An - THREE NIGHTS.
Kim Fay has numerous contacts/friends here in Hoi An. She has
great insight into this remarkable UNESCO town’s cuisine! We’ll start our
special time in Hoi An with a Foodie
Tour. We visit a family factory that
produces the famous White Rose ‘banh bao vac’. We’ll end today at a great wine tasting and
snack dinner.

Day 5 : Hoi An (B L)
Time
to meet the tailors in the morning, and then we make our way to a cooking
school for an afternoon cookery class at
the very famous Red Bridge Cookery School. We’ll meet Miss Vy. We go to the
Organic Tra Que herb village to see where all the freshest of herbs are
grown in this area. We’ll even pick some for our class. Then it back to the
kitchen for our lesson, and lunch afterwards.
Rest
of afternoon, evening is free to browse Hoi An streets, or simply indulge in a
spa treatment or what about a Photography tour? (Own expense)

Day 6 : Hoi An (B L D)
After
breakfast today, today after breakfast we have a look at the production of the
magnificent ‘White Rose’. Then it’s back to the tailors for fittings and more
shopping, and café trying, sitting, sipping, enjoying. Tonight we’ll have in
indulgent dinner at the Nam Hai so
don’t eat too much during the day!

Day 7 : Fly to Dalat B D

spot. She’ll introduce us to a few secrets chefs/restaurants in Dalat.

Day 8 : Dalat (B D)
Today we’ve included a
visit to local markets, a meeting up with baguette makers, and have another
cookery lesson - get to make and taste those croissants/patisseries we’ve been
enjoying @ Lien Hoa Bakery.
We’ll have dinner at another
favorite super spot Nam Phan.

Day 9: Transfer to HCMC (B D)
Free until transfer to the airport for HCMC. Upon arrival, meet

afternoon to have a stroll down Dong Khoi Street, Saigon, popping into a few of
their silk shops or go to the Ben Thann market for some amazing shopping
bargains.
The
Refinery for dinner tonight is a French bistro is built in the former
headquarters of the leading Opium refinery (hence the name) of old Indochine

Day 10: HCMC (B, L, and Cocktails)
Today you will have a cooking lesson. You will meet your chef at
Ben Thanh market to purchase the ingredients you need. After that the chef will
take us to the cooking class at Hoa Tuc
restaurant.
In the afternoon, you can visit the highlights of Saigon. Notre
Dame Cathedral, The Post Office, The Opera House, the War Museum, etc. Meet for
cocktails at a roof top bar.

Day 11: Fly to Siem Reap (B D)
Free until transfer to the airport for Siem Reap. What about a

This afternoon - we have a very special Book Club event right on the hallowed Temple Grounds with
our Author Kim Fay. She’ll give us Goosebumps as we walk through the pages of
her latest novel ‘The Map of Lost
Memories’.
Tonight we have dinner at our favorite spot in Siem Reap – our
own Hotel – Heritage Suites.
