Reflecting on a few great meals I've had in Vietnam.. and here's to many more to come..

This was Ms Vy cooking class in Hoi An.. we learnt to make the famous white rose, and here Ms Vy is teaching us how to make those very delicious Vietnamese pancakes...mmm
 
Every morning, Pho for breakfast! This bowl is in Ho Chi Min, but I've had them in Hoi An, Hanoi, Halong Bay.. all over Vietnam! mmm! 
 This was the best pumpkin soup.. the day was chilly, it was in March, I was in Lang Co, at the Banyan Tree.. oh gosh.. it was the best ever! 
 
Another best ever.. Mushroom soup.. with cheese to eat through first! oh gosh, and that basket of the best baguettes! mmm 

 This was my very beautifully presented dish in Hanoi.. little thin pancakes, with the yummiest of dipping sauces.. very moorish! 
 Dragon Fruit.. a must to try when you visit Vietnam.. 
  Beautiful burcher musli and mango/granadilla's.. mmm! 
Scallops served on board in Halong Bay.. I don't usually like.. but these were amazing! 
 Coconut water is the best when its this fresh! Mekong Delta
 Pineapples cleaned for you to munch on when you're shopping.. Hanoi

 This waffle/pancake lady sure knows her talent! - She's based in Nha Trang
 My bowl of chicken curry was superb after a very relaxing massage I had at Ninh Van Bay.. so fresh.. so lightly perfumed by the fresh herbs.. ooh I remember that day well! 
 My pot of ginger herb tea after my early morning walk/swim was so thoughtful, and so enjoyed! 
 The smell coming from this basket of baguettes was so enticing! Hard to resist! 
 Freshest of fruit.. mango, dragon fruit, watermelon, granadilla, bell apples, 
My piece de resistance..memories of this dish of crepe Suzette will live with me forever! Hanoi Sofitel Metropole.. I'll be back soon!

Life is sweet.... musk sweets!!

I am certain all my readers/viewers of this blog post know about MUSK SWEETS?
Those delightful little pink sweets, filled with an aroma that immediately takes you back to your childhood?

I wish my computer had the sense of smell!

These little sweets have history in every child's memory, I hope/imagine?
I know my husband, F tells of his fond memory of his grandfather, 
an ex South African cricketer, who lived with them, after his retirement. 
Come Sunday morning, the family of three boys, 
mom, dad and grandfather would head off to Church, 
as was the very traditional way in South Africa. 
The Church was The Dutch Reformed Church, where children defiantly are only seen, not heard!
The boys, 3, 6, and 9 would be lined up to sit,  next to Grandfather, mom and dad sang in the choir, 
and it was his responsibility to keep them quiet.. 
He did this with these little pink sweets!  
shh u... shu... SHUSH!... 
"Here's another one! Now keep still!"

Musk sweets are a popular confection in Australia and New Zealand, available from many different suppliers. Having withstood the test of time, musk sticks consist of a pink semi-soft stick, usually extruded with a ridged cross-section. Their flavour and aroma is quite floral, reminiscent of musk perfume. They are also called 'musk sweets' and 'musk lollies'. Also available is a fruit-flavoured variant called "Fruit sticks", which look like coloured musk sticks

Now I started my heading with
'Life is Sweet'.. WHY.. 
In light of huge bush fires raging across this very vast land of Australia that we call 'home'.. 
and over 120 homes in Tasmania have been destroyed.. 
Temperatures down in Sydney went to a new record yesterday of over 45!! 
How can I say "life is sweet"?
And thus far this 2013, has delivered a huge amount of negativity, hurts, 
and disappointments, and its only 9 days old!

Just to name a few...
Friend Cheryl fell over and landed in hospital under observation, now recovering with severe bruising,
Friend Barbara also just discharged from hospital session,
Friend Koo, had a very nasty fall, skinned her chin so badly, after walking in high heeled sandals ?

Well.. its how we handle those disappointments 
and crises that makes life sweet or not!
Its what we do when we're pushed down that makes the difference to this world! 
 We've got to keep on going, no matter what is thrown at us! 
So.. 
Whatever you're looking at today.. 
remember its your outlook that matters, that the outcome! 
Suck on a musk sweet.. that will make the difference ! 

Now back to my MUSK SWEETS..
Easy to eat, they are small enough to put into your wallet, pocket, or purse, and they refresh your mouth instantly, with this pop of floral patchouli like soap bar fragrance. 
We defiantly eat with our sense of smell! 
Imagine eating without that?
But .... 
The definition of MUSK
'A substance secreted in a glandular sac under the skin of the abdomen of the male musk deer, having a strong odor, and used in perfumery'
ug! UG...u g!!! OOOH! ug! 
No.. as I said previously... 
no matter is what is thrown towards us.. its our attitude.. !!!

ITINERARY

Day 1 (1): Arrive in Hanoi (D)
Upon arrival, a guide is waiting to transfer guests to the hotel. Hanoi Sofitel Metropole –
THREE NIGHTS

Ø  Meet at Le Beaulieu Restaurant at 7.00pm for casual easy dinner (beverages/drinks at own expense) - get to know your fellow travellers. This restaurant is located in the Sofitel Metropole hotel. The friendly atmosphere of this contemporary haute brasserie where patrons come to savour the best and most authentic French cuisine in Vietnam. Le Beaulieu is particularly well-known for Chef Denis's family recipes..

Day 2 (Hanoi (B, L, D)
Free in the morning

Kim will introduce us to her friends in Hanoi.

Meet the renowned French chef, Didier Corlou, at his restaurant La Verticale which gained fame with French-Vietnamese fusion dishes created by the chef himself. After a short introduction, enjoy a guided market visit and then transfer to the chef’s villa, also known as “Carambola house”
In the evening, we could do a night market and taste some great street food which Kim thoroughly recommends. 
Tonight we indulge in bun cha on the streets. Bring along a healthy appetite, plus your camera and notebook.

Day 3 (: Hanoi (B D)
Free time to hit the shops and to discover the Old Quarters on a Cyclo? Be sure to taste a good few Ca phe da (Vietnamese iced coffee) as well as a patisserie or two! 
Meet for lunch at KOTO – Know One Teach One – this establishment provides positive change to the lives of street/disadvantaged youth.
We’ll have dinner at the famous Cha Ca la Vong (as authentic as it comes).

Day 4  : Fly to Danang – Hoi An (B D)
Free for tai chi in the park, a strole to the Lake, or wander through the lanes of Hanoi, until transfer to the airport for Danang, then transfer to Hoian and check in the hotel.

Kim Fay has numerous contacts/friends here in Hoi An. She has great insight into this remarkable UNESCO town’s cuisine! We’ll start our special time in Hoi An with a Foodie Tour.  We visit a family factory that produces the famous White Rose ‘banh bao vac’.  We’ll end today at a great wine tasting and snack dinner.

Day 5 : Hoi An (B L)
Time to meet the tailors in the morning, and then we make our way to a cooking school for an afternoon cookery class at the very famous Red Bridge Cookery School. We’ll meet Miss Vy. We go to the Organic Tra Que herb village to see where all the freshest of herbs are grown in this area. We’ll even pick some for our class. Then it back to the kitchen for our lesson, and lunch afterwards.
Rest of afternoon, evening is free to browse Hoi An streets, or simply indulge in a spa treatment or what about a Photography tour? (Own expense)

Day 6 : Hoi An (B L D)
After breakfast today, today after breakfast we have a look at the production of the magnificent ‘White Rose’. Then it’s back to the tailors for fittings and more shopping, and café trying, sitting, sipping, enjoying. Tonight we’ll have in indulgent dinner at the Nam Hai so don’t eat too much during the day!

Day 7 : Fly to Dalat B D

Day 8 : Dalat (B D)
Today we’ve included a visit to local markets, a meeting up with baguette makers, and have another cookery lesson - get to make and taste those croissants/patisseries we’ve been enjoying @ Lien Hoa Bakery.
We’ll have dinner at another favorite super spot Nam Phan.

Day 9: Transfer to HCMC (B D)
Free until transfer to the airport for HCMC. Upon arrival, meet transfer to hotel for check in. Park Hyatt Saigon. We have time this afternoon to have a stroll down Dong Khoi Street, Saigon, popping into a few of their silk shops or go to the Ben Thann market for some amazing shopping bargains.
The Refinery for dinner tonight is a French bistro is built in the former headquarters of the leading Opium refinery (hence the name) of old Indochine

Day 10: HCMC (B, L, and Cocktails)
Today you will have a cooking lesson. You will meet your chef at Ben Thanh market to purchase the ingredients you need. After that the chef will take us to the cooking class at Hoa Tuc restaurant.
In the afternoon, you can visit the highlights of Saigon. Notre Dame Cathedral, The Post Office, The Opera House, the War Museum, etc. Meet for cocktails at a roof top bar.

Day 11: Fly to Siem Reap (B D)

This afternoon - we have a very special Book Club event right on the hallowed Temple Grounds with our Author Kim Fay. She’ll give us Goosebumps as we walk through the pages of her latest novel ‘The Map of Lost Memories’.
Tonight we have dinner at our favorite spot in Siem Reap – our own Hotel – Heritage Suites.
