They'll begin with the all-important Dragon Dance: on Monday, Jan. 23 at 11:15am, a dragon will run riot (figuratively, at least) beginning at Park Hyatt Saigon's porte cochere and winding up through the hotel's hall. The dragon will be followed by an entourage of musicians and dancers playing celebratory Tet music. The dragon dance ritual heralds good luck and prosperity for the coming year.
For the duration of Tet, the Park Hyatt Saigon's Vietnamese Restaurant Square One (see image below) serves live Dungeness Crab, with a choice of three different preparations:
- Whole Crab On Ice, served with Traditional Condiments
- Whole Wok Fried Vietnamese Chilli Crab with Rice Noodles
- Whole Poached Crab, with Tarragon, Chive Beurre Blanc and Asparagus
Guests who check into the Park Hyatt Saigon reside in French colonial digs overlooking the Opera House. The Park Hyatt Saigon's colonial-style rooms have wood floors, high-speed Internet access, white marble baths with walk-in rain showers, and beds with fluffy feather pillows and duvets.
